I don't know about you, but we've hit the middle of summer, and we have tons of basil. It's a great problem to have.One of the best ways to use a lot of basil is to make pesto! This recipe is blitzed up in the food processor in seconds!

Here’s how we make it:
1/4 cup walnuts/pine nuts
2 garlic cloves
2 cups packed basil
1 cup grated parmesan cheese
1/3 cup extra-virgin olive oil
a pinch of salt if needed
Take all these ingredients, and whiz them up in the food processor until nice and blended. Then you're ready to use it as you like! You can put it on pizza: use it in pasta; use it as a dipping sauce; anything you want really! This time we made a sauce for our pizza with it, and it was as delicious as always!

To keep any left over pesto, add it to a jar or bowl and cover it in olive oil. This will keep in the refrigerator for two days! What do you do with your leftover basil? Let us know in the comments!
