The easiest plants I have found to grow well in my opinion are lettuces, and spinach. They’re fast to germinate, easy to grow, and tasty! I also find kale and romaine nice additions to make a great mixed salad. I started in a 32-seed starter tray from Bootstrap Farmer, filled it with our soil mix and planted kale, giant noble spinach, red romaine, and bok choy that I bought from Baker Creek. We planted all these up on June 1st and waited for them to take off. It only took four days for most of these to germinate, and we were on our way to having fresh salads!
It took a little more than three weeks to see plants that were big enough to harvest. I took out my little snippers and took the largest leaves off the plants. The first bunch was a half a salad‘s worth. This week it was about the size of a whole salad for one person.

I would say this mix is a little too floppy texture wise. I would recommend going with a kale-spinach mix. I might not grow baby romaine leaves since they don't have much texture, although if grown to full-sized heads, I am sure they would be much thicker and have more of a bite.
